CCEYA vs Elementary/Highschool Template Options

We have different templates for CCEYA and Elementary/Highschools. 

Explore adding a flag to specify which template should be used, assuming that we will hold different templates for childcare centres vs schools. 

Alternatively, consider adding a configuration file for the typst template for further customization.
