Fix and improve the Tests

The tests which were written for the old SpringUserFramework application are not running correctly as ported to this new Demo app. They need to be reviewed, fixed, and ideally augmented to provide as much coverage of the SpringBootFramework library as possible, via this Demo app.

@Edamijueda - I will but give me a couple days to finish up my work on #8 where I have made several changes to the unit tests, and get that merged down to main. Thanks!
