Pull request overview
This PR updates the security policy to reflect the current supported versions of the project. The version table has been updated to indicate that version 2.x is now supported (replacing 1.1.x) and version 1.x is no longer supported (replacing 1.0.x), aligning with the current codebase which is at version 2.2.1.
